You can buy it in these giant frozen blocks at Chinese supermarkets, and then after you thaw it out, you slice it and toss the slices into hot pans to get a nice, crispy skin on it.

OMG, is that true? Those are among my favorite dim sum dishes and I always thought you had to either get it at a dim sum place or spend a million hours making it yourself.
